Anything Goes- Breakfast Quiche

While I was making pecan pie for tomorrow's potluck, I made a booboo while making the crust. I thought my parents had vegetable oil at their house, but the only oils I found were truffle (and that will never be touched by me) and olive oil for salad dressings! So I decided to see how the crust would come out and when I finished molding it to my dish, all I could smell was the garlic seasoning in the evoo. I was upset because my pecan pie couldn't have garlic in it! My mom suggested I make a quiche and that's what I did. A little before midnight, I made my very own quiche with what I found in the fridge to surprise my dad for breakfast. I'd say a nice little holiday treat, don't ya think?

For the olive oil crust:
1 1/2 c. flour
2 tsp sugar
1 tsp salt
1/2 c. olive oil
2 tbsp milk

1. Mix all of these ingredients in a round bowl until you get a crumb crust.
2. Push on dough to mold into the dish
3. Poke holes in the crust
4. Brown in the oven at 400 degrees for 5 minutes
5. Take out and let sit until you're ready for your quiche



Essential ingredients for any quiche:
eggs
milk
seasoning (salt, pepper, garlic, basil)

Other ingredients I used in my quiche:
1/2 small onion (chopped)
3/4 c. mozzarella cheese (grated)
1/2 c. orange pepper
chopped pieces of leftover steak

1. heat oven to 350 degrees
2. started with 3 eggs and beat them in a bowl
3. mixed in my other ingredients
4. don't forget the seasoning
5. pour into crust
6. bake in oven for 25-30 minutes checking every 10 minutes for progress

Remember... anything goes! Use whatever you can find in your kitchen or leftovers from the night before! Anything you like in your omelet, add in your quiche!

I'm glad I found a good use for that pie crust I made!
