Lemon Chicken

Matt and I made this delicious lemon chicken last night. The main ingredient is lemon curd, which can be bought at the store (usually in the pie section) or you can make it yourself (recipe below chicken recipe).

Ingredients

1 1/2 llbs chicken breast cut into chunks
1/4 cup flour
salt
2 tbsp vegetable oil
1 tbsp white wine vinegar
1/2 cup chicken broth
1 cup lemon curd (prepared)
1/4 cup hot water
1 zested lemon
fresh chopped chives

How to make it

Coat chicken lightly in flour and season with salt
Heat skillet over high heat
Stir fry chicken until golden (not completely cooked)
Remove chicken from pan
Return pan to medium heat
Add vinegar to the pan and let it evaporate
Add chicken broth and scrape up any drippings
Add lemon curd to hot water and stir
Add lemon curd to pan and whisk
Add chicken back into pan and let simmer until sauce thickens
Remove from heat and add chives and lemon zest





Lemon Curd Recipe

Ingredients

3 egg yolks
1/2 cup sugar
2 lemons, zested and juiced
1/2 stick butter cut into pats

How to make it

Mix egg yolks and sugar in medium metal bowl and whisk until smooth
Add 2 tablespoons of lemon juice
Add zest and mix all ingredients
Add enough water to a medium saucepan to come about 1-inch up the side
Bring to a simmer over med-high heat
Reduce to low head and place metal bowl on top of saucepan (without touching water)
Whisk until thickened (this is long part) look for mixture turning light yellow
Remove from heat and add in one pat of butter at a time
Refrigerate to thicken even more

  3. MMmm looks good.. never would have thought to use the lemon curd from the pie section to make dinner.

    1. Thanks for the comment Hena! You'd think it'd be real sweet, but you mix it with water before adding it to pasta so it tones it down a bit.
